In the restaurant "Le Cerretelle" you can indulge in the cuisine of the Maremma, a combination of seafood and hearty specialities of the Tuscan mountain villages. The Tuscan cuisine - a short introduction

Cinghiale - A typical speciality of the Tuscany are dishes of wild pig, especially the sausage Salsiccia di Cinghiale. You just have to try this fine salami with a wide variety of flavours: Finocchi - fennel, garlic, walnut or parmesan.

The Tuscan cuisine is characterised by its simplicity and fresh ingredients. In the preparation olive oil plays an important rule. It should always be possible to identify the ingredients the dish is made of. On every table you find the mostly unsalted Tuscan white bread, cut into thick slices, then toasted and spread with garlic and highest quality olive oil it is served as Bruschetta. Some like tomatoes on top. Crostini, in former times spread with liver-milt pasty, are nowadays often served as mushroom crostini, tomatoe crostini with basil or crostini al pesto, a green sauce which is a mix of parsley, basil and pine nuts.

Starters

A popular starter are white beans, mixed either with olive oil or all’uccelleta with tomatoes. Ham is best from the Casentino, sausages are sometimes flavoured with fennel seeds. In Tuscany people love to deep fry carciofi (artichockes). On the table you never miss ricotta. This fresh cheese is nowadays often spread with balsamico vinegar.

Sweets in the Tuscan cuisine

In the various regions there are various sweets like the torta della nonna, panforte, chesnut cake, cantucci from Prato accompanied by a glass of Vinsanto.

Cantucci and Vinsanto: A kind of almond zwieback is cantucci or biscotti from Prato, available in the whole Tuscany. An absolute "must" as a dessert with a glass of the delicious Vinsanto, the precious, golden dessert wine, matured in oak barrells for years.
